100% Aglianico. A part of grapes is harvested later, at the end of November.
The vinification is traditionally red with particular long contact with the skins.
It ages for 24 months in French oaks barrique and tonneau and 18 months in the bottle.
TASTING
At Sight:
An intense dark ruby red color.
Nose:
Complex on the nose with aromas of mature red and black fruits as marasca, ripe cherry, black cherry and elder fruits. Aromas are followed by hints of leather, licorice, mentholated tobacco, eucalyptus and cacao powder, delivering scents of dried rose, violet and spices like black pepper, coriander and nutmeg.
Palate:
On the palate, the wine is very rich, with soft tannins well balancing the acidity and body. It offers a lingeringly persistent finish.
This wine results in an extraordinary complex structure.
Wine-Food Pairing
Sassius goes well with game, mature cheese and cold cuts.
Excellent with beef tagliata with aromatic herbs and with stuffed pork stew with dried plums.
We recommend to open the bottle 1 hour before drinking and to serve it at 16 – 18 °C.
